When I say we eat a lot of salads in our house, I mean it. They might not be the healthiest, but we try!

Since we eat so many salads, I am constantly searching for inspiration as well as new recipes to try. If you follow me, then you already know I follow the food blogger extraordinaire Gaby Dalkin. She has some of the most amazing dressings and sauces to spice up any dish. If you are looking for something her site is a great place to go not only for inspiration but for solid recipes your family is sure to enjoy. There is not a huge difference between the two recipes. I just don't ALWAYS have fresh jalapeno's on hand and I like a little more garlic and a kick of chili paste in mine. Instead of adding a ton of ingredients to my shopping list, I found a quick and easy change to adjust the recipe to pack a little bit more of a punch.

We keep this dressing in the fridge almost 24/7 because it goes with everything!!

Thai Style Dressing

  • 3 Tbsp Sambal Oeleek
  • 2 Tbsp Olive Oil
  • 3 Tbsp of Coconut Aminos (Soy Sauce will work as well)
  • 2 Tbsp Honey
  • 1/4 cup of lime juice (About the juice of two limes)
  • 1 teaspoon of salt
  • 3-4 Garlic Cloves (crushed) Add these in last to make sure you don't overdo the garlic

We use this dressing on everything! Of course, it is great on salads, but we also use it as a marinade for steak, chicken, and even fish. We also like this mixed in with rice noodles as a side dish. If you are looking for more of a meal, just add your favorite protein, scramble some eggs, a few veggies, and dinner is served!
