My grandmother made the best icing! It was so simple which is what made it the best. I had been trying to figure out her recipe for years. I was almost ready to give up until I was going through recipes at my mom's house. On the very far bottom corner of a recipe card, I noticed, in my grandma's writing, "add orange juice and powdered sugar for great icing."
I thought to myself, no way? It was orange juice? I would have never added orange juice! Ever since then, this recipe has been something I played with until I got it as close as I thought I could. When my husband was craving key lime cookies, I thought, could I use lime juice instead of orange to make the icing? Well, guess what, I could and I did!
This icing is freaking amazing! Tart from the lime juice, but sweet from the powdered sugar, and perfect for topping cookies, especially my key lime sugar cookies! I know that you can not always find Key Limes in the Midwest, I have made this with regular limes and it is also delicious!
This recipe will make just enough icing for my Key Lime cookie recipe! If you are using it for something else, this recipe will make enough for about two dozen cookies.
