Friendship House Cheeseburger Soup Copycat

I enjoy recreating recipes that I have had, this is my copycat version of the Friendship House Cheeseburger Soup recipe!

As I have said before, I am definitely not a food blogger, but I do love to cook! I enjoy recreating recipes that I have had and today seemed like the perfect day for soup! Several years ago our office was hosted by a local title company for a soup potluck. One of the soups they brought was a Cheeseburger Soup and it was fantastic! When we asked for the recipe they told us that it was a recipe from the Friendship House.

For those that haven't been, the Friendship House is a restaurant in Wamego, KS. The Friendship House has been around ever since I can remember. While there is a ton of recipes out there for Cheeseburger soup, this is my favorite and the best part of this recipe is that it is super easy! Enjoy and feel free to enjoy in our same fine china, Dixie for even easier cleanup!

Friendship House Cheeseburger Soup Copycat

This soup is a hearty bowl of comfort food! This hearty soup is great to feed a crowd and the best part, it is a one pot meal! This soup is easily doubled or if you like a little extra heat, you can kick it up a notch by using Hot Rotel versus regular!

Equipment

  • 1 Stock pot

Ingredients
  

  • 1 med. onion
  • 2 lb. Hamburger
  • 2 cans corn
  • 1 can diced tomatoes
  • 1 can Rotel
  • 1 can Red Beans
  • 1 lb. Velveeta

Instructions
 

  • Saute Onions in a large Stockpot.
  • Add Ground Beef to the pot, once fully cooked drain fat off.
  • Add in cans of corn with liquid.
  • Add can of diced tomatoes and can of rotel with both their liquid.
  • Drain and rinse the beans, then add to the pot.
  • Once soup comes to a boil add the Velveeta.
  • After Velveeta has melted salt and pepper to taste, then enjoy!

Feel free to play around with this recipe to fit your liking. You can easily add more cheese, beans meat, or spice it up to your taste etc.
