Chipotle Raspberry Black Bean Dip Copycat

It always seems like I crave the Raspberry Black Bean Dip at So Long Saloon and Taco Lucha on Mondays when both restaurants are closed.

Are you like me and absolutely crave the Raspberry Black Bean Dip they serve at Taco Lucha and So Long Saloon? If so, I hope I can help you get your fix on this amazing appetizer! It always seems like I crave the Raspberry Black Bean Dip on Mondays when both restaurants are closed.

So, in true fashion, I decided that I needed to create my own copycat recipe since I am sure I am not the only one. I mean how do the people who have moved away from the area or those like my in-laws, who only get to enjoy this completely craveable dip during a quick visit survive without it? Melba Sauce is a family favorite, we enjoy it on angel food cake, ice cream, fruit, and more, so using it in this recipe for my So Long Saloon Copycat Raspberry Black Bean Dip worked perfectly!

So, in true fashion, I decided that I needed to create my own copycat recipe for the Raspberry Black Bean Dip since I am sure I am not the only one who loves this dip.

I am the first to say, while this copycat is delicious and it will get you by, the original is still an absolute MUST! There is just something about being at either So Long Saloon or Taco Lucha and enjoying their Chipotle Raspberry Black Bean Dip with an ice-cold Nancy to drink, it's spectacular!

For those eagle-eyed fans, you will notice my recipe adds a little green topping that is not included at the restaurants. Well, thank my mom for that. She always told me adding a green garnish instantly makes any dish healthy so I figured why not, but of course, it is completely optional!

Raspberry Black Bean Dip

This dip is perfect as a side dish or as appetizer. Perfect to feed a crowd, this Raspberry Black Bean dip is an absolute cowd pleaser!

Equipment

  • Oven safe dish
  • Skillet

Ingredients
  

  • 1 Tbsp Olive Oil
  • 1/2 medium Onion
  • 1 can 12 oz Black Beans
  • 1 tsp Chipotle Powder If you like things more on the mild side start with a 1/2 tsp!
  • 1 clove Garlic
  • 5 Tbsp Melba Sauce (Chipotle Raspberry Sauce) If you can't find Melba Sauce, just grab a Raspberry sauce. It will work fine!
  • 1/2 cup Pepper Jack Cheese
  • 1 8 oz Cream Cheese
  • Top with Cilantro or Parsley (Optional)

Instructions
 

  • Turn on oven to 350 degrees.
  • In a skillet, add olive oil and then saute onion until translecuent.
  • Drain and rinse the black beans, then place the beans in the skillet with the onions and warm thru.
  • Add Garlic and Chipotle Powder, once fragrant, add Melba Sauce to heat through. Then transfer to mixture to an oven safe dish.
  • Top with cream cheese, Mebla Sauce, and Pepper Jack Cheese.
  • Place in oven for 10-15 min, until cheese is melted and dip is hot and bubbly.
  • Once out of the oven, top with Cliantro or Parsley (optional).
    Serve and enjoy!
