For those who are not following along, after seeing the recent sale of the Brookville Hotel I decided I needed to pull out my old copies of their recipes and take a trip down memory lane!

The Brookville Hotel holds a special place in many Kansasans' hearts. I can remember growing up and eating at the Brookville Hotel in Brookville, Kansas with my family. We celebrated many special occasions at the Brookville Hotel which was located about 15 min. from Salina.

The Brookville Hotel was moved even closer to I-70 near Abilene, Kansas. After holding on for many years, the pandemic was the final straw, but lucky for us the next chapter of the Brookville Hotel is about to begin. Recently, the Munson Family purchased the Brookville Hotel and plan to re-open the famed restaurant and add their beef to the menu!

While it might surprise some of you to hear that the Brookville Hotel shared its recipes. Especially since they were a James Beard American Classic winner, but as with most things in life, eating at the Brookville Hotel was a true experience. Coming into the building, being seated in the large dining rooms, sitting family-style and then patiently waiting for those Blue Willow dishes to come out piled high with Fried Chicken and all the fixins'!

Without further ado, the Brookville Hotel Creamed Corn is super simple and a total crowd pleaser!

Brookville Hotel Creamed Corn

The Brookville Hotel served their Cream Style Corn family style with their fried chicken, coleslaw, pickles and more everyday to tourist, families, and locals alike! This creamed corn is a total crowd pleaser and super easy to make!

Ingredients
  

  • 2 1/2 lb. box frozen corn I used two 10 oz bags of frozen corn.
  • 1 tsp. Salt
  • 3 tsp. Sugar
  • 3/4 cup Whipping Cream You can also use plain coffee creamer if you have it on hand.
  • 2-3 tsp. Constarch

Instructions
 

  • Cook corn in a small amount of water.
  • Add salt, sugar, and cream.
  • Bring mixture to a boil and thicken with mixture of cornstartch and a little cream.
